I haven’t had a recipe in a while. I first talked about these on my post Ways To Get Creative With Tacos/Tortillas | Feeling Fine Friday. My husband is a picky eater and because of that I am limited to things I can come up with. However, this easy recipe can definitely adapt to what you like. You could make them breakfast by adding scrambled eggs, cheese, bacon, whatever. You could make them vegetarian by using veggies. It’s entirely up to you 🙂
Two Flour Tortillas – to make one quesadilla.
Using a skillet, place it on the stove and set the temperature to medium. While the stove heats up, get out one tortilla and place it inside the skillet.
Place a handful of shredded cheese on top of the tortilla. You don’t have to use this much, I don’t usually use this much, to be honest. (But for photo’s sake). You mainly want the cheese to cover most of the tortilla.
Next, add your pepperoni slices. You could also use any other meat substitute if you wanted, or add your choice of veggies. Onion, pepper, tomatoes, corn, whatever, go crazy. You could leave it with cheese only if you like.
You are going to use a spatula and lift up the bottom to see that is has started to brown.
When you see brown spots, you are going to place another tortilla on top. Make sure to press down so the cheese sticks. This will make it easier to flip.
Flip the tortilla over so the brown spots face you.
Use the same technique with the spatula to keep checking the bottom. You do not want your tortilla to accidentally burn.
Once it is to your liking move to a plate and use a pizza cutter to slice the pieces into four corners.
Done 🙂 Repeat if you want to make more than one.
